Corn Chowder

Corn Chowder

There is something about corn chowder that just amazes my taste buds every time I eat it. I started to fall in the love with this soup when I worked at Ballard's. I tried it one night during work and it was INSTANT love. So I decided to try making my own take on it. 


Above is my final product of the yummy soup! 
So enough talk lets get down to the recipe! Its a flexible recipe really..when I first made it there wasn't even any potatoes! So really tweak it to your own liking. 

Corn Chowder Recipe:
Ingredients:
6 potatoes
6 slices of bacon
1 onion
1/2 cup of water
2 cups of milk
1 can of creamed corn
1 can of regular corn
Salt and Pepper

So first you are going to fry up that bacon in a pot or dutch oven. Once its crisp take out the bacon and leave it on the side. Now add your chopped up onions to that yummy leftover bacon grease. This is your flavor agent for this soup! Let your onions sauté until they are golden caramelized brown. Once they are tender add up your chopped potatoes. You can peel them or leave the skin on, I do it both ways. Add the potatoes and water and give a good stir. This will deglaze the bottom of your pot bringing up the great flavor stuck on the bottom. Once water is added put a cover on the pot and let simmer for 15 minutes. Once potatoes are fork tender add in your milk, corn, creamed corn, and salt and pepper. Let the soup reheat and thats all. I like to garnish my soup with a pinch of cheddar cheese, my bacon crumbled that I fried earlier for the grease, and green onions!

Picture time!!

SO today I woke up and had an itch for photography. I've always enjoyed taking pictures, but I have not gone out and taken pictures since last fall! Today I decided to hop in the shower and get dressed and wonder outside. I decided to bring the tripod with and just take pictures of myself using the self timer! So here are some of the pictures I took....actually ALOT. I am warning you, if you don't like seeing pictures of me I would advise you not looking. ;) HA















All these pics were just taken for fun and to get my paws back on a camera, it was fun being outside and it was such a BEAUTIFUL day outside!!

Yesterday I celebrated mothers day by going to church with my mom and gramps! After church we went downstairs for egg bake that the church bakes for Mothers day every year. I have always loved egg bake, but my all time favorite egg bake is my Grandmas recipe. It has always been a family favorite. I am so glad I have her recipe written in her handwriting it's so special.

For my gift to my mom I thought a good idea would be to list off reasons why I love her...So I took some recipe cards and listed 30 Reasons why I love my mom.
Once we did our family time Brayden came over and we decided to do a little four wheeling around the Ellis Ranch;)




Overall I love my family to pieces!! They are my favorite people in the entire world!!! I am so thankful that I grew up with the BEST mom, gram, and sister:) All lovely ladies that mean the world to me. 

I thought I would attach my grandmas Egg bake recipe....since I am trying to make this a recipe blog:) Hope you enjoy!

Ingredients:
  • 9 eggs
  • 3 cups of milk
  • 3 slices white bread, cubed
  • 1 1/2 tsp salt
  • 1 1/2 tsp dry mustard 
  • 1lb pork sausage
  • 1 1/2 cups grated cheddar cheese
    • Brown the sausage. Drain. Beat eggs, add milk, salt & mustard. Beat again. Add bread, sausage & cheese. Stir.
    • Grease a 9x13 pan, 350 degrees, 45 minutes or more. Let stand for 10 minutes. Serve.

Blueberry deliciousness!

When I was bored out of my mind and wishing there was something I could bake, I went for a search for a good muffin recipe. I decided to go with a blueberry muffin. Not only is this a blueberry muffin, but I made it with fresh picked blueberries. (YUM!) Here's a pic below and the recipe! Try and enjoy! Seriously! 

HERE'S ALL IT TAKES

wet ingredients
  • 3/4 cup fresh milk
  • 1/2 cup applesauce OR oil
  • 1 fresh egg
dry ingredients
  • 2 cups flour
  • 2/3 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cup fresh blueberries
Heat oven to 400ºF.  Butter bottoms of a 12-muffin cup pan.
Beat milk, applesauce, and egg in a medium bowl.  Add in flour, sugar, baking powder, and salt, all at once.  Stir until flour is just moistened; batter will be lumpy.  Fold in blueberries. Do not over stir the batter.
Use a large cookie dough scooper to fill muffin cups 3/4 full.  Bake until golden brown, 16 to 20 minutes.  Immediately remove from pan.
Store cooled muffins in a container with a loose fitting lid and enjoy them later on in your day

Made my sister try it with me..so I founded cute painted rocks and decided we should paint some owls..they didn't turn out perfect but mom loves them and they look good above her kitchen sink. I also made her a cute penguin:)

First trip to Winnipeg MB with Brayden

This weekend Brayden decided to take a couple days off work, and take me on a trip to Winnipeg so we could get out of the house and do something besides sit on the couch and eat! (Brayden thinks that this is all that I do) 
This is the first thing we did when we got there. Sat in Jens living room (Brayden's aunties) and watched the Olympics on TV and ATE some pringles. Big change huh? At least it was a new environment right? :)

On the last day of hanging out in Winnipeg, Braydens buddy Dan brought us to a indoor go-carting rink. Or in Braydens words a, "Goat-Carting rink" haha We thought it would only take an hour or so, but it took about 4 it was so darn busy! Those darn Canadians!

p.s. Brayden didn't have closed toed shoes with him for go-carting, so he had to rent some sexy velcro shoes from the rink. Also he had no socks, he might have caught like foot fungus. ICK!!
When we were on our way home I was starving, so Brayden and I decided Tim Hortons would be the best option. Wow I must say that I have found my new obsession/love. I tried the Iced mocha latte and a turkey club, now if you know me as well as Brayd does he knows that no matter what I order to eat I will pick it apart and throw about half of it away. Well I am proud to say that I made the clean paper club! I didn't pick anything off of my sandwhich or anything! I love love love Tim Hortons. If you have not gone there, GET THERE! :)

Finally we are happy and excited to be on our way back to Baudette/Rainy to see my WONDERFUL family that is all up. We had a good quick trip and spent a few bucks in the process:) Brayd if you are reading this, Thank you for taking me for my first trip to Winnipeg!!!!!! :)
